I don't have salad advice, but thought I'd mention something else: Indian food.  Plenty of vegetarian non-fried entres to choose from.
Though the amount of butter that goes into most Indian dishes probably goes against whatever dietary practice they're going for.  Thai food falls into the same category, but with lots of sodium and some other not-quite-healthy bits.
Flying Star, Trombino's, Savoy all have large salads that can serve as a main meal.  Is he eating fish?
The Grove has wonderful salads!  Il Vicino also has good ones.  I seem to recall there being a topic on this some time ago--might help to search the archives.  Good luck with the new endeavor!
Hands down, Hannah and Nate's Market Cafe.  They have two locations, one in Riverside Plaza (Coors and Montano), the other in Corrales on Corrales Rd across from Indigo Crow.
Good thread for Today and every Friday for the next few weeks.  I was just thinking to myself what am I going to eat today that is meatless (Ash Wednesday).

I love the Cooperage's Salad Bar.

They have soup on the salad bar as well. and everything is so fresh!

Nicky V's on Coors has a very nice stacked salad. Also, you can get just the soup and salad bar at Cooperage and not order a meat dish. Their salad bar is very good.
I second Il Vicino. They Insalata Pescatore (is he eating fish?)is very good, and pretty substantial.  Jinja also has a couple of generously portioned, tasty salads. Oh! And Relish, too!

My haunts have already been mentioned. I haven't tried them but Saggio's and Fastinos (drive up!) have a number of robust looking salads.

Oh yeah another mention for convenience: Dion's has a number of tasty salads. The greek is good, and ranch. And for more gourmet the chicken and pecan one is quite tasty.

besides sweet tomato, souper salad, the salad bowl, & tomato cafe? (what's with the tomato meme?)

i love the seafood salad at desert fish.

i'd like to thank you all for some wonderful ideas. hubster just called to rave about a fantastic lunch he had at jason's deli, of all places. he got a half vegeterian muffaletta and it was exactly what he's been looking for. he could barely finish it so it must be HUGE. you have all been a big help narrowing down what he was looking for. if it were up to me, i'd have handed him a head of lettuce and told him to have at it. duke city fix people are the best.
