If you've been to Jennifer James lately, you'll know what I'm talking about -- what's up with that incredible pumpkin pie on their fall menu?

 

I've heard it's made with a locally-grown squash called Long Island Cheese (or something like that), but I'd kill for more details...

Ok, in case you're curious, here's the scoop from the folks at JJ101:

Start with local Long Island Cheese Squash from amazing Chispas Farm!! make your own pie crust. we suggest reading Rose Levy Beranbaum's Pastry Bible but be prepared for a real lecture (we don't really understand all of it yet). we use part butter, part crisco. use basic squash pie recipe; we use The Joy of Cooking. we use plenty of ground ginger and be sure and let your crust rest before baking. we love it out of hand for breakfast with a hot cup of coffee! have fun.
