Hello:

I'm looking for a cake recipe that does well here.

Box mixes taste pretty good, but usually rise a lot.

I got a 'high altitude' mix at a local baking shop which performed well (not much rising, dense texture), but I didn't care for the taste. It only required water to be added, no eggs and no oil.

Does anybody have any recipes for cakes that work well here?

The regular cake mixes have high-altitude notes, small print, under the directions. It usually involves adding extra flour and another tweak or two. Sometimes I do, but sometimes I don't. If you're using a mix, though, go for the ones you add eggs and oil to, and I think they'll taste better than the powdered eggs water-only things.

My personal favorite cake recipe is the one from the side of the Hershey's cocoa box and it works fine here. Because it's a kind of heavy cake anyway, with so much cocoa, it does well.

Thanks for the URL!

I always follow the high altitude directions, but my cakes invariably end up with large domes and voids up to about the size of a pea or bean inside. Over time, I've learned to reduce the heat and extend the baking time slightly. Also, sifting the mix and then hand-mixing seems to help a little.
