ABQ--El Paso--San Antonio--Dallas and back to ABQ?

So, making this trip in early May to visit family in Texas. Any noteworthy places to stop on the way or on the way back? (We pretty much know about the ones in southern NM, but were wondering about TX). We need to make a stop somewhere close to El Paso to sleep on the way there, and then we want to spend a day or two somewhere in between on the way back as well. Any suggestions?
