About Me:
Started out as a microbiologist, moved into chemistry, then worked as a laborer, then i started and maintained a dog training/care business in the ABQ since 1999, then out of an interest in cooking and eating, I began to make my own sausages, then pasta, then ravioli and various unique fillings. The mission of Joe S. Sausage is to redefine what sausage is. Making sausage was inspired by my grandparents who made sausage as well as other Italian foods, sausagemaking or charcuterie, is a dieing art, also, sausage tastes good with beers. I make all original recipe sausages, some are my interpretation of traditional sausages, like my north Valley Garlic Polish, which is the traditional antithesis of common macrosausages, or the New Mexico shop is located @ the SE corner of RioGrande & Griegos, enter on Griegos, T-Sat 11-4, 505 6880445, if I am not @ my shop either w/in or outside of my hours, please call for I will gladly be there shortly, great sausages and a nice local brew are awesome!!

A few days ago I was standing in front of The French Riviera bakery eating some bread and talking w/ a friend, all of a sudden I hear many car horns blasting, I look, tearing *ss down the middle of the southbound lane of 4th street is this chihuahua, in front of 10 or so backed-up motorists,so i step into northbound traffic, it was kind of crazy, made eye contact w/ the dog, some motion, went down to one knee and he came to me, i scooped him up,… Continue

Those are some real nice grilled artisan made sausage sandwiches, seasoned w/ a combination of a bell pepper melange, white onion, olive oil, oregano and salt, classic by any standard!!

That sounds great! Nothing quite like that. Pretty basic down there. Bone in pork chop, cajun spice rub, sometimes some Dales Marinade (the steakhouse it originated from is great. its in Florence, AL. Little town in N. Alabma) grilled and then slapped on a hoagie (bone removed) with some grilled onions. Sometimes people put a spicy mayo mixture on it.

Joe, I have been reading alot about your creations lately since I moved to town. I was just talking with a buddy from Alabama this week lamenting the absence of pork chop sandwiches in this city. Hey Joe... talking about dogs and breeds yesterday I thought my favortite was the Old English Mastiff. I was poking around the internet and found out I didn't even have one. I had an American Mastiff. Now I'm over (almost) losing my last dog; I'm wanting one. The American Mastiff is my favorite breed, I had one and loved it. Lot's of work and food to keep in the family, but since my kids are gone it would be worth it.
