That sounds great! Nothing quite like that. Pretty basic down there. Bone in pork chop, cajun spice rub, sometimes some Dales Marinade (the steakhouse it originated from is great. its in Florence, AL. Little town in N. Alabma) grilled and then slapped on a hoagie (bone removed) with some grilled onions. Sometimes people put a spicy mayo mixture on it.
Great to hear from you. Yes, most recently Memphis in May amature category. No medals or prize money, just great times with the team and good BBQ. I'm looking to gather a group together here in NM sometime soon.
Joe, I have been reading alot about your creations lately since I moved to town. I was just talking with a buddy from Alabama this week lamenting the absence of pork chop sandwiches in this city. Then Iread a post on your page talking about great pork chop sandwiches! If you are open/around next week, let me know. I'm there.
Hey Joe... talking about dogs and breeds yesterday I thought my favortite was the Old English Mastiff. I was poking around the internet and found out I didn't even have one. I had an American Mastiff. Now I'm over (almost) losing my last dog; I'm wanting one. The American Mastiff is my favorite breed, I had one and loved it. Lot's of work and food to keep in the family, but since my kids are gone it would be worth it.

Teddy had it right Joe. I heard it once said, "Those who cannot do teach. Those who cannot teach, criticize.” I listen to those who are there with me, doing what I am doing and ignore those looking in from the outside. Took me a lot of years to learn that ;-)
My work has caused my abscence, thank you for venturing to try my products, a true Duke city original and juxtaposition or anachronism, i'm a little rusty, later!
